Green bean casserole was forever one of my favorite Thanksgiving sides, BUT I knew that all the dairy didn’t feel great to me. That being said, I thought it would be even that much MORE delicious if it was made from scratch, with fresh delicious plant-focused ingredients. And guess what?! I was RIGHT! Nick vouched too, better than the traditional!! Move over Campbell’s… 😉

Dairy Free Green Bean Casserole Deets!

Let’s cover the important ingredients and tools you’ll need to execute this delicious dairy free green bean casserole. Here’s the details:

  • Simple Mills Almond Flour Crackers: These are VERY important in this recipe as they’re replacing the weird French’s Crispy Onions that like aren’t really even onions?! These are CLEAN, AMAZING ingredients that you will love + that will make you feel great too. All you have to do is pulverize them (a food processor or blender works) and they work like a CHARM!
  • Coconut Cream: We’re subbing out the heavy half/half cream for a coconut cream, and believe me – you cannot taste ANY coconut. It’s an amazing source of healthy fat and MCTs as well ;)!
  • Tapioca Starch/Flour: We use the tapioca starch in the ‘mushroom soup’ mixture that we make, and it helps to thicken up the soup to get the texture just right. Definitely don’t forget this ingredient as it plays a big role in the texture of the dish! Here is the tapioca starch that I love – it’s gluten free, grain free and paleo friendly.
  • Air Fryer: As the recipe notes, the onions fo the topping are meant to be cooked in an air fryer! If you haven’t caved and bought one yet, I highly recommend doing so – it’s one of my most used kitchen accessories! This one is similar to the one I use.

Dairy Free Green Bean Casserole

Ingredients

  • Air Fried Onions:
  • 1 sweet onion, halved & sliced
  • 3/4 c almond flour
  • 1 c simple mills almond flour crackers, pulverized
  • Salt & pepper, to taste
  • 1 egg
  • 1 tbsp almond milk
  • Green Bean Casserole:
  • 1 can green beans, drained
  • 1 tbsp ghee
  • 1 tbsp olive oil
  • 1 c (8 oz.) mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp almond flour
  • 3/4 c low sodium veggie broth
  • 1 1/4 c coconut cream (it'll be about 1/2 of the can, use the top half, the thicker part)
  • 2 tbsp tapioca flour
  • 2 tbsp nutritional yeast
  • Salt & pepper, to taste

Instructions

Let’s Get These Green Beans!

  1. Preheat the oven to 400 degrees F. 
  2. Get 2 shallow dishes. Add the 1 egg + 1 tbsp almond milk to one dish and whisk until well combined. In the other, combine the pulverized almond flour crackers, almond flour, salt + pepper, mix well.
  3. For easiest coating, keep the onion rings together in a flat layer after cutting in half then slicing. Dip the onions in the egg wash, then the cracker/almond flour coating + place on parchment paper (this will go into an air fryer.) Do each piece at a time.
  4. Once all coated, place in the air fryer between 370-400 degrees F. Allow to bake for ~7 minutes on each side, 14 minutes total.
  5. While onions are cooking, add ghee, olive oil and minced garlic to a sauce pan, then add mushrooms on medium heat. Allow mushrooms to cook until tender.
  6. Once tender, add in the almond flour + mix well. 
  7. After mixing in almond flour, add in the veggie broth, coconut cream, nutritional yeast, salt + pepper.
  8. Using a whisk, turn the heat to high for about 3-5 minutes, whisking frequently. 
  9. Add in tapioca starch or flour and turn heat to medium/low, continuing to whisk until the mixture turns into a creamy soup like texture (about 10-15 mins.)
  10. Once texture has thickened, fold in the drained green beans + about 1/4 of the air fried onions.
  11. Place the mixture in a greased 8×8 baking dish, then top with the remaining air fried onions.
  12. Bake for about 15 minutes and then enjoy!
